Workbenches!

Workbenches would be a crafting table with a 5x5 crafting grid, the recipes would be more complex and expensive, but you could craft items that would otherwise be unobtainable, items such as drills to bandannas could be crafted.

The Workbench itself would be crafted with 1 plank in the bottom corners, one diamond in the middle of the bottom row, 1 iron ingot in both sides of the middle row, and one Pillar quarts block in the middle of the middle row.

the total cost for the workbench would be

2 wood planks

1 diamond

2 iron ingots

8 quarts

This recipe requires you to get to the nether AND find diamonds, so this would be a mid-game/early Late-game crafting station, like the enchantment table.
