A giant tower lurks over the snowy mountains. What could it be, a trap, or a new challenge? Abandoned and destroyed, this castle holds many secrets. Loot found beneath its floors. New monsters along with strays inhabit its walls. The player can rebuild this structure, or fight in its dungeons.

Finally, a cool idea that doesn't involve entire new dimensions and a zillion new mobs and block types. Even better, snowy biomes could use the attention. Voted.

I dunno. It would be cool, but it would make Minecraft into more of a dungeon adventure game.
I don't think it should be abandoned castles, but instead ruins similar to those in the ocean.

The ominous tone of your writing really gives this suggestion some flair. I would very much like to see this in the game, but for another reason: Building a castle in Minecraft that is actually a decent size is a huge project that can take days, and I don't mean the 20-minute ones. If this were implemented, it would only require a simple conquering and touch-up to have a castle to call one's own.
Perhaps the size can vary as well, from a single tower to a sprawling compound. There could even be a snowy village near or within the walls that would generate as a secondary structure. Maybe the villagers need help throwing down the tyrant king, or they need to be cured of the zombie plague. Maybe the castle could have collapsed sections, blasted-out walls and floors, booby traps, secret rooms, puzzles, you name it. It could even have parts that have since been buried or overgrown and need excavating or a massive dungeon system underground. Maybe you could find an enchantment table library or even a brewery, perhaps even a broken Nether or End Portal. You could find armor stands with potentially enchanted armor and weapons on them or chests with valuable loot. One might even find a Dragon Egg and a few heads of various mobs laying about the place - a testament to hard-won battles before the castle inevitably fell. There could even be a cemetery!
To sum it up, I think this idea has a lot of potential and could very well end up being a favorite structure of most players.

No dragon eggs. Dragon eggs are to symbolize that the player has killed the enderdragon. Putting them in the overworld defeats that purpose.

I wholeheartedly approve of the idea of surface-based dungeons such as castles. We already have something similar in the woodland mansion, and a big haunted castle in the mountains and extreme hills would just be so fitting.
Seems cool, as igloos and spruce villages are the only structure in snowy biomes, and igloos the only exclusive one.

Personally, I'd add some of my thoughts as well.
I think there should be several types of fortified dwellings across various biomes. Perhaps in a plains biome you might come across a Norse-style hill fort with stones and cobble walls remaining with barrows deep beneath.
Perhaps you might find an abandoned spire in a spruce forest full of witchcraft and shadows.
Perhaps a fortified fort might be found upon a great mountain across a steep ravine by woods of oak and birch.
Essentially, all kinds of neat abandoned fortified dwellings and ruins would be really neat and special to add to the game.

Yeah sort of like dungeons but above ground and more interesting looking with better loot.
I am sure this would add to the dull snow biome, and give a bit more backstory to the world.
This would be a great place to bring the Dragon Egg to to spawn a new dragon. Would put a spin on 'putting the dragon into the fire.'
Maybe it could have some redstone traps? If it's a larger dungeon bulid maybe it could utilize more complicated red stone traps then previously?
It would be nice if the chunks that have a castle in them would be called "castle chunks" and depending on the castle, certain creatures spawn like in one castle horses of zombies and skeletons spawn while in another you find nether mobs have invaded (traveling merchants sell glowstone blocks so it isn't impossible) also it could be nice if a boss mob may potentially spawn there as a extra challenge

Abandoned Castles would be similar to the mansions already in the game. They could a dungeon filled with pillagers with a pillager lord guarding his treasure. You would buy a map from a cartographer as per usual and then travel to its location.
The castles can have a mix of always included and randomly spawning rooms. Random rooms could just be rooms that don't include any items that you cannot obtain in any of the other rooms. There should always be a ruined throne room and treasury. Random rooms could include: the guard quarters, guard towers, an armory, the servant quarters, a kitchen, the royal families rooms, the tombs, and dungeon.
The dungeon can contain captives that the pillagers have captured. These captive villagers will be captives until freed with the keys you can get after defeating the pillager lord. The reason for this is that you might not want a village to be spawned right underneath your new castle. you can attach a lead to the villagers while there captives so that you can create a village elsewhere.
Cheep loots like rotten flesh and string can be found anywhere in the castle other than the treasury. It will have valuable loot, such and gems, ingots, armors, weapons, and rare enchanting books ( like the frost walker enchant ).
There can also be haunted castles with specters and evokers lurking in its depths. An evoker boss would be guarding access to the treasury instead of a pilager king. The treasury in these castles could include worse loot, but also contain potion and enchanting supplies that the evokers were keeping.
The structure may only be able to spawn above specific y values as well, this would insure it spawns on top of mountains!
