Various less-used keyboard shortcuts such as pressing 'tab' in the crafting table's GUI to open/close the recipe book, the various 'f3 + some key' keyboard shortcuts such as those to toggle game mode, open the pie chart, chunk borders, hit boxes, as well as other hotkeys such as ctrl + 'various keys' (to drop a stack of items at once for example) all cannot be rebound.
This is not only an inconvenience for some, but a flat out accessibility issue. Not everyone plays Minecraft with their left hand on the keyboard, some may play with their right hand, some may play using alternative controls that are not W, A, S, and D. If this is the case, it is very difficult to use these pre-determined and un-editable keyboard shortcuts, leading to these players suffering unfair disadvantages such as being unable to use the 'tab' key to assist in quicker crafting, or being unable to as efficiently use various f3 features for performing more technical actions such as pie-charting, using hit boxes, and so on. There is no reason why there shouldn't be an option to re-bind these keys, like how players can currently re-bind most keys (such as the movement keys, hot keys, etc) to whatever they want, especially when it is frustrating how a player is put at an immediate disadvantage for simply using the other hand, or different controls, to play the same game.
In summary there should be an option to re-bind all keyboard short-cuts such as f3, tab (in the crafting GUI), having to press ctrl, etc.
