Minecraft's moon phases currently shouldn't be possible as it's always exactly 180 degrees opposite to the sun, whereas in real life the moon phases are the result of the moon orbiting the earth which causes it be lit from different angles, with the bright side always facing towards the sun.
This could be implemented by making the moon move independently of the skybox, similar to the Astrocraft mod.
Realistic lunar cycles would have the added benefit of improving the game's atmospherics, allowing the moon to be seen during different parts of the day depending on the lunar phase. This could also be a way to implement occasional solar eclipses.
