Most posts I see here are suggestions, so I want to change it up a bit and express my love for the environmental changes added in recent snapshots/drops.
I never found myself to be the type to like the ambient changes, I've been the "finish the game quick" person. But as I've gotten older, I've learned to love the effort put into making the game feel lived in, something that games like Terraria have done well.
It can be hard to try and make a game feel lived in, but also allow growth for the player to expand upon, and I think recent snapshot updates have done that super well. It definitely started with the 1.16 Nether update, adding a vibe to each biome, with things such as fog color, particles, etc. And Mojang kept that up as they added new biomes, such as the Pale Garden.
It seems like they're now putting effort into refurbishing existing biomes, with stuff like the leaf litter and mob changes based on the biome temperature. And I hope Mojang continues this trend so players will want to find a specific biome to make their base, and build into the themes around it. Taking these steps of changing the biome feel, just by adding small atmospheric touches is cool. Stuff like more cave noises that aren't scary, like a reverb to sounds, or jungle ambient noises would be something that I would love to see.
