1 simple thing could help those who would want to add custom mobs into the game:
Make the mob variants accessible to data pack creators through their own folder directory where "entity type" is the parent folder similar to how the worldgen folders are treated. I don't know much about Mojang development, and I'm learning things through data pack development. It would be awesome if there could be some sort of infrastructure surrounding the variants moving forward, and the direction that it would go. If not in development features, maybe in the patch notes for data packs and resource packs.
an example of a directory could be:
entity_type/passive/farm/foo
