Minecraft is a great game where you can play the same world for years and not get bored because you can build whatever you want so long as you have the materials. The only issue is that most players get bored trying to gather what they need in that late game stage: Stacks of Cobble for a giant castle, Ores for a Treasure Room, Wood for a Village, Giant Farms, etc. This issue could be solved for late game players who have already spent days mining, farming and cutting down trees.
One way you can do this is by enchantments that make these tasks a little less monotonous. For example;
- Treecapitator that allows an Axe to cut down an entire tree from one block breaking
- Vein Miner which allows pickaxes to mine the entire vein of ore in one block break
- Stone Miner which allows pickaxes to break of all stone type blocks in a 3x3x1 area at the cost of not being able to break ores
- Harvester which allows Hoes to Harvest in a 3x3 area
All of these could require a large cost of hunger and durability as a cost to the time saved by these enchantments. I would also suggest that these enchantments be level 30 on a table and/or found in rare structures, perhaps Vein miner in a Bastion, Stone Miner in an Ancient City or Stronghold, Harvester in a Desert Temple, and Treecapitator in a Dungeon or Jungle Temple.
Overall I believe these would add longevity to the game for most players by allowing for more building/fun to happen without discouragement from the tedious task that is gathering resources.
