TLDR: there isn't a clean way to do the opposite of dispensing a minecart anymore.
In the current release, there are ways to use the minecart rail snapping behavior to cleanly break a hopper or chest minecart and separate it from it's payload by clipping it into a lava cauldron. These minecart unloaders have been key in creating high throughput hopper minecart based contraptions due to their predictability, speed, and payload separation.
Normally, hopper minecarts have the unique ability to intake 20 items per second but can only be emptied at 2.5 items per second. Without a fast way to unload a hopper minecart, that extraordinary loading speed becomes nearly un-harness-able.
My favorite use of this is in category item sorters. The unique properties of hopper minecarts are used to detect weather a payload contains items in a category of many item types, then the minecart is broken, sending the payload to it's destination using the unique properties of water streams. The broken minecart is then separately sent back to the queue at the beginning.
Without the ability to use rail snapping to break the minecart, we loose the ability to transfer items at speeds reflecting the hopper minecart's intake, and put it back in a position where dispenser based minecart queues are useless.
I believe this reduction in functionality would be a great loss for the contraption designers.
