As someone who has raided just over 100 End Cities, and even built a gigantic base in the End void in one of my SMPs, I understand the dimension like few do. It is a desolate place, surrounded by uncaring void. It is beautifully poetic, and its charm lies in its desolation; its nigh-lifelessness.
Unlike how we got a Nether overhaul in 1.16, I think that, if Mojang is planning an End update, that they should preserve the dimension's atmosphere. That isn't to say that it does not need new content - indeed, it does, very much. For the Nether, we had the old generation be transformed into the Nether Wastelands biome, which was a good decision, but there is something fundamentally different between a desertic biome, and a desertic dimension.
The End has this interesting "outer space vibe" that is interestingly not similar to actual space and science fiction. This should be explored, not replaced with vibrant biomes blooming with life, and this should not be confined to a biome type either. Let's not repeat 1.16 in the End.
Personally, I'd add more block variants for purpur and end stone, and add new structures and mobs to the dimension, while adding as little nature as possible. New biomes would be cool, but this should be approached with a lot of thought.
I think Mojang has done an excellent improving the game, despite the recent controversies and let-downs. I trust that whatever is added will be awesome, regardless of what it is.
