For how often saddles are come across in recent Minecraft updates, it gets slightly disappointing to see what little they can do. I think that horses and mounts in general need to be modernized to add more variation and personality to each player and their mount. For example, camels could swim like in real life so you don't fall off, and mules should be able to wear horse armor and chests in reward for breeding a horse and a donkey, especially since most don't know they exist. I also think a modern set of animations for the horses would be fun, given how outdated they look compared to like frogs and wardens and stuff. Along with that, I think crafting a lead with an arrow sould make a lasso arrow or something that you could shoot near a mob to leash them from afar. This would be a great way to catch striders from the lava oceans to hitch a ride on. My final request is to buff most horses' health. In no world should and adult horse have less health than a human.
