Minecraft is not possible to be played as a vegan for a few reasons. I will explain the issues and possible solutions here.
because wool is necessary for beds, sheep must be shared or killed. This could be remedied with a cotton plant that provides wool (It could be renamed to cloth to make it consistent). Four wool (Cloth) can be crafted together to create canvas which makes canvas armor, a replacement for leather armor that has a beige base as opposed to the typical orange one.
Dirt could be put into compost and it would provide the player with two compost blocks, which are basically black dirt that is extra fertile and increases the speed of crop growth. This is not necessary for veganism, but makes veganism easier since more crops can be produced.
Soy beans could be made into tofu or soy milk, and tofu can be cooked to create cooked tofu. Soy milk can be used the same as milk and crafted as well.
flax can be grown in sand, and just like in reality flax can be a replacement for eggs when baking cake just as vegans do in reality.
Alternative to squid ink is ash or charcoal/coal. Coal by itself could be made into black dye (To represent it being ground into a powder) and then used to make books. Glowstone dust could be made into glow dye, so glow squids do not need to be harmed.
Other plants used by vegans such as lentils, rice, or other staple foods would help be as filling as meat. Exotic or biome specific crops like durian, jackfruit, or starfruit would be welcome.
