Limit the number of times certain blocks can be broken by the player before they are weakened and/or destroyed, a form of material fatigue from being overused. For instance, wood and dirt logs can be reused indefinitely but wood planks and stone subject to being destroyed after being broken x number of times. Sensitivity to breaking should vary by block type and difficulty settings. This would encourage players to be more mindful when building and provide an incentive to keep collecting resources.
