There should be more incentives to use the infamous enchantments such as smite, bane of arthropods, etc, and a variety of potion effects. There could be certain mobs or boss mobs found in different biomes or dungeons that only take damage if you attack them using those enchantments or potions, or at least are more affected than what is currently in the game. Some might even require multiple conditions to met simultaneously, such as, smite + fire damage (similar to how zombie villagers can only be cured with a golden apple after being given the weakness effect.) This would make combat in certain situations much more interesting and difficult, by offering new tiers of power progression, as players would not stand a chance against certain mobs without having the appropriate strategy prepared. It would emphasize that for instance while players would always benefit from equipping general use enchantments like sharpness, there could still be meaningful choices presented to the player about how to prepare for specific combat encounters, that cannot necessarily easily be solved by a single universal solution.
