TL:DR
Locks/Insignias & Keys would NOT be used to keep players out of chests and doors but rather as a mechanic for linking Villagers to their workstation, bed, and even the general area you'd like them to be in.
Why?

There is currently no (easy?) way to manually link Villagers to their job blocks & beds

This causes problems because: you can't use things like barrels, grindstones, etc. for decoration in the same area as villagers without having to worry about them linking. (This is less of a problem on Java I know)

Locks and Keys in the shape of monster or animal heads is very medieval and thus fits with the overall motif and feel of Minecraft.
Efficacy as a Mechanic/Functionality:

Keys and Insignia doors would be fashioned in the shape of any mob head.

Ex: Copper Skull Key matches to Copper Skull Insignia Door.

Villagers could "wear" Keys. (The hands-folded-in-sleeves is iconic for
the Villagers' appearance so maybe holding them as a visual cue isn't preferable)

Putting the specific insignia on the door of the villagers house and throwing them to corresponding key would manually link them to said house and the objects (workstation, bed) therein. As long as the house is fully intact, (no exposure to air blocks in walls or roof, the linking would remain)
