This has been stated several times, but I've noticed that this topic has mostly fallen on deaf ears.
Framerate and chunk loading speeds are simply not where they need to on console, especially after recent updates. Performance, in general, seems to get worse and worse as time goes on. Minecraft used to run flawlessly on my base XBOX One, and it had the ability to go up to 24 chunks render distance. Firstly, after recent updates that has been reduced to 18. But more importantly, frame stability is atrocious. With anything higher than 8 chunks, you will experience stuttering every 5 seconds or so.
This also extends to the Switch version. While you can "technically" set the render distance to 12 chunks, it is near impossible to experience a fluid 60 fps while doing so. And the chunks aren't able to keep up with the player if you move any faster than basic walking speed. This can cause issues because you could absolutely fly right into a mountain that you can't even see coming and die. This wouldn't be such a problem if reducing the render distance solved the issue, but it doesn't. Sure, frame stability is better, but you still get periodic stuttering and chunk loading issues. And while it's easy to chalk this up to "hardware limitations" as the Switch isn't the most powerful console... again, this was simply not a problem in previous updates. This is 100% related to optimization.
