So.. Ive watched the trailer for the new mobs and there was one thing that captured my imagination way more than all 3 of them. I've also re-watched some old popular YouTube videos where the ships were edited and remembered how when I was young they captured my imagination, only to be disappointed when I actually could not do it in-game. And I understand that at the time there were massive technical limitations in place. But things have progressed so far now.
Minecraft is a game all about what you can build. Adding new features is great, but adding to the things that expand what you can create is a great way for the game to move forward. Adding new blocks gets stale. But adding more ways we can use those blocks... That hasn't been done in ages and it would be a massive boost to the interest in the game.
Technical side:
First of all, I know about the one block at a time policy but the solution to that is to make ships actually buildable block by block. And then add a block like a steering wheel to make them functional. With a check that doesn't allow overly sized ships and a message that tells you to reduce the size/disconnect from land if a potential ship exceeds that size like the "you can only sleep at night message"
Now to how they would work. They would transform from blocks to entity like blocks like when a piston pushes a block when a player shift clicks the wheel, and back to blocks in the nearest 90 degree angle assuming its clear of any other blocks when re shift clicked
