You are incredibly quiet in the Ancient City and manage to loot a few chests. These are the City's regular loot, with the exception of Enchanted Apples being removed. You also manage to get a few Echo Shards. The Journal shows that these can be crafted with Blaze Powder and Ender Pearls to make Eyes of Ender. After making them, they guide you to a Stronghold tens of thousands (not thousands, so you can explore other structures) of blocks away. Leaving the Ancient City you follow them to their destination.
You light the End Portal, but the Journal tells you about the Ender Dragon and its (newly improved) difficulty. You Nether-travel back to your original village and use the curing mechanics you learned in a new "lab" room in the Stronghold to get better prices and stock up on tools, weapons, potions and more.
Finally in the End, you throw everything you have at the Ender Dragon, from your Trident, now enchanted with Loyalty for the Crystals and Riptide to get around with the help of your Water Bucket. She proves to be a very hard boss, but finally you see that death animation and claim the XP and the Dragon Egg, then fly to the End Cities that contain extensive riches in abundance, even having Enchanted Apples!
Isn't all of this so much more challenging and fun than the original storyline of "get diamond armor, get eyes of ender, kill the dragon"?
