To begin this I want to say that while I have seen similar suggestions on this site, I have to say that they are either too complex in my opinion or do not actually explain what they want to see happen.
The past few updates (1.19 / 1.20) have seen the addition of new trees that generate very randomly, where no tree looks the same, which makes the biomes feel more organic. That however made me realize how outdated the current design of most trees like oak and birch is.
I think the a lot of trees should get an update to make them feel more organic, while keeping their simplicity, so that other biomes can feel more special. The logs should still be stacked on top of each other in a line, to ensure that the trees are easy to mine, so that oak forests and similar keep their spot as an early game biome.
Maybe branches or full branch blocks similar to mangrove roots, that are attached to the logs could be added. They could act like a log in the way that surrounding leaves do not disappear, but break, when the log that they are attached to is destroyed similar to scaffolding. If these branches and the leaves around them generate more randomly, the biomes would feel more organic.
A few smaller changes I would like to see made to trees are:
-replacing the log block from acacia trees with wood, so that they only show bark to the outside.
-fallen trees from bedrock in the java edition.
