Hello!
Beetroot are currently one of the least useful vegetables in the game, but I believe they have potential. As they can already be used to mass produce red dye, why not apply dye to beetroot, making coloured beetroot which can be planted to produce more? It's like colouring and breeding sheep, but you produce the raw dyes rather than coloured wool. Wool is no longer the only coloured block and a way to mass produce any dye in survival mode without going through lots of flowers would make certain buildings much easier to achieve. It would also make it easier to make other dyed items like candles.
This would solve the problem of dye production while giving beetroot a unique and valuable function.
For this to work, you would also have to remove beetroot seeds from the game and make them plant straight in the ground like the other vegetables. I've always disliked this inconsistency.
