Well I believe a much-needed update is in order for Minecraft's End dimension. Currently, it lacks excitement and variety, aside from the presence of end cities. To revitalize the End, Mojang could draw inspiration from the Minecraft Dungeons: Echoing Void DLC. This DLC introduces unique mobs like the Blastling, Watchling, and Snareling, which would add much-needed diversity to the End beyond the abundance of Endermen. These new mobs would bring fresh challenges and unique mechanics, slightly increasing the overall difficulty of the dimension.
Moreover, taking cues from Minecraft Dungeons, incorporating the vibrant yellow vegetation and trees would greatly enhance the aesthetic appeal of the End. Additionally, a new liquid resembling the ominous dark purple liquid with a faint glow as seen in Minecraft Dungeons could be introduced, adding a further intriguing element to the dimension, and possibly a new mechanic.
To further enrich the End, the addition of new end city structures or entirely new structures altogether would be an exciting prospect. Building upon the success of the Nether Update, which corresponded with a DLC in Minecraft Dungeons, it's possible that Mojang might adopt a similar approach for the End Update.
We should also already be expecting such an End Update eventually anyway.
