This is a very good idea. The pink ore could also be a rose quartz, giving a bit more meaning behind why nether quartz is named as it is.

Maybe they could come in clusters like amethyst -- I think it'd be very pretty to find pink clusters of crystals in the caves. Especially if they had a glow to them.

This is not a good idea, it would ruin the pattern of the current ores. We have basic ores that everyone knows of, like copper, iron, gold, amethest, diamond, emerald, redstone, lapis lazuli, etc. All of these ores with the acceptance of Redstone are common and well known, Redstone gets a pass because its name is simple and combines two existing English words. Adding "Sakura crystal" wouldn't fit with the others and its name doesn't tip off the players on what it even is (unless you're fluent in Japanese). Other than customization there wouldn't be anything to craft with it, and finding an item to with it would be difficult because this ore isn't used for anything in real life either. Also, I'm assuming this is Japanese, so in Japan what would they call it? If it wasn't changed, for Japanese players it would be just "Cherry blossom crystal". In my opinion, it would be better if it was called "Pink Stone" rather than "Sakura ore", or something like rose quartz like someone else suggested.
