I really liked the concept of "extinct" mobs, in the likeness of sniffers, and I think that there should be a little more.
A crazy, as I thought, idea suddenly came to my mind. What if Minecraft had giant ancient dragonflies that you could fly on? Or what if the players had any flying mountable mob to fly before they get to the End? There are very few flying mobs in the game, and there are no mountable flying mobs. In reality, giant insects existed in ancient times, due to an excess of oxygen in the atmosphere.
Giant dragonflies would be from those ancient times. They would be only slightly larger than the player, because of which they gradually decrease during the flight, because can't support the player's weight. Giant dragonflies would have a limited amount of stamina and when it expired they would land and rest for a while before flying again. Thus, they could be more balanced. They could also form "caravans" like llamas when not being controlled by the players so that multiple players can fly next to each other. By holding the space bar for a some time, they could dash up and push mobs on the ground away from the player with a shock wave, dealing 1 damage to them. Their eggs could be found under a thick layer of suspicious dirt under water in a normal or mangrove swamp. Their eggs would grow in water, like tadpole eggs. But they would take a VE-E-ERY long time to grow.
If you think about it, this idea at least sounds... interesting.
