I think that the Ruby item can be brought back, here is my pitch for how they will be used:
The Rubies will be a difficult to find item similar to Emeralds, but like the Emeralds they can also be traded but the trades the player makes with the Rubies will impact their game significantly more than trades with Emeralds.
Examples: The player can get an item with multiple enchantments as long as they have enough Rubies, or they can potentially get a piece of enchanted Netherite armor or tools with enough Rubies.
The player can even find a boss known as the "Ruby Manticore" which is located in a deep cave, and the boss itself is also a rare occurrence. If the player manages to kill it, the monster will drop either a sum of Rubies or a Ruby Block. The Ruby Block can be traded with some of the best items a villager can give you.
The Rubies rarity is between Diamonds and Emeralds, and while they are easier to find than Emeralds, they will only be found on one block in caves or on high mountains. Rubies can also be found in chests within shipwrecks or in buried treasure, as well as in Jungle Temples and Desert Temples. Ruby Blocks can only be obtained by killing the Ruby Manticore, or by trading a significant item, tool, or weapon the player has in their possession for a Ruby Block. A Ruby Block can also be crafted.
In a nutshell: Rubies should make trading more interesting and should have high valued items in their trades, being more rewarding than trading with Emeralds.
