Birds of Prey and Falconry

Birds of Prey (Owls, Eagles, Hawks, Falcons, etc.) would spawn relatively rarely with nests in trees and you have the ability to tame them and have them hunt for you (Falconry).

Owls would be nocturnal, naturally.

Fish seem to be the only viable option to hunt, as there are no rodent-like mobs for them to hunt.

Breeding birds would lay their eggs in nests and they hatch after a set time (few in-game days?).

Different textures depending on biome, as the frogs do; e.g. snowy owl in cold biome.

Falconry would be an alternative to fishing, allowing you to fish automatically, without a rod, but sacrificing the enchantment bonus the rod may give you

Bird Perches for them and Parrots maybe?

    this idea is what I was actually going to suggest when I figured out how to suggest ideas.  I think that maybe a falconer's glove would be a good way to balance this, and it would probably be crafted with leather(or rabbit hide), and possibly wool or a carpet for padding(because of a birds talons)
