Another option would be to add more Fungi "woods" especially to get some of the more usual colors, which could have some in the End (more fireproof material) and the End (creeper and ghast explosion proof maybe?) Even could add in another cave biome with glowing fungi that occur between -40 to -64

It's a good idea. Like terracotta blocks, each type of wood will look different with the stain mixture. Since more blocks can be added (1.13+), this is something that can be done perfectly well.
