Undo minecart mistakes!

Say you mean to craft a hopper minecart, but then you put a chest in instead, or you have a chest boat, but you want to make it a normal boat for friends to sit in with you, or a animal. Well in older versions you would just break the minecart, and it would be separate. But people found that annoying, but now once it’s a chest minecart, it’s forever a chest minecart, but I feel like you should just be able to put chest minecarts in a crafting table to undo what had been done.
