Players have to tame cows, chickens, etc to breed them. Once they're domesticated, a health bar appears and it's up to the player to feed them regularly, provide water and shelter and make sure they're healthy.
If the animals are put in stables with no source of water or food (hay bales), the animal will not survive. If they have food and water source but aren't put in stables, they'll stay close to the player and not despawn.
Pets such as dogs, cats, and birdies should show signs to let the player know if they're sad, lonely, happy. etc Then, it's up the player to interact with them, give them friends, play with them etc.
Each time an animal requires something or dies under their care, it'll pop up to let the player know.
If the player is gone for a while on an adventure, the player can set up a farming villager to look after the animals if needed. Farming villagers can grow wheat for the animals to feed them.
Non-domesticated animals live normally and so can breed and eat as they please.
I think it'll be more enjoyable to have pets then as it's a bit more realistic and there's more to do with them.
