Minecraft 1.20 sets out to include seven new default player skins. It is a nice feature for new players who haven't got a skin of their own yet but I feel as though it doesn't add anything for the rest of the playerbase. The reasoning behind this addition is to increase inclusivity and make everyone feel welcome through representation. This goal of Mojang's could more properly be reached while also adding something for all players by implementing new player models to go alongside the new skins. I imagine every new skin could have its own model akin to how Steve and Alex have seperate models with slight differences. The most prominent difference between Alex' and Steve's models is the difference in arm width so these new models would similarly only be slight alterations of the usual models, only changing little things in little ways. This feature, if implemented, would add representation in the game by representing people of different body types and looks, making everyone feel included. People who already have skins would also be able to choose between the new models, thus giving everyone something to play around with. Additionally, a new model for each new character would help to make them stand out amidst the crowd, making them feel less like Steve and Alex recolors. They would also get more character, which I believe would help endear them to the players. I think this feature is befitting of the update and that it would benefit the game quite a lot.
