Actually, Coelacanth do still exist, they're just quite rare and also hide a lot. But I do really like this idea.

Yes, cool idea. Coelacanth are do have powerful tail slaps, and they also have strong armour too. Coelacanth should also eat squids too, which might signal their presence.

Honestly I believe more prehistoric mobs should be added from the Sniffer, and maybe thru old type of fish spawn or put in the ancient city to give more use to it

Their actually still alive, and one of the two alive species is critically endangered, the other vulnerable. Which could help raise awareness if they are in game, also typically coelacanths only live very deep so they could possibly only spawn at a certain depth. The player might be able to pick them up in a bucket(?) to keep as a large fish for a your aquarium (around salmon size)

I was already aware that the coelacanth is still alive but they can be an ancient and full of lore mob like the sniffer

expanding on fish fossils, they should be craftable into either and item or potion that lends you the coelacanth's shockwave abilities

Do you know what else is older than the dinosaurs, is also still alive, and (in many cases) highly endangered? An animal that is misunderstood like no other? Sharks (and crocodiles)! Seriously, sharks deserve to be in the game. A neutral mob that may attack in a similar manner to a goat's charge,(meaning the random probability) perhaps? or a neutral mob that becomes hostile under specific conditions? (like spiders and polar bears... speaking of polar bears, they actually actively hunt humans... if they can be neutral...) And so on and so forth... adding sharks in a manner like this would likely avoid spreading their negative reputation while also not lending the sense that they are harmless...  Not to mention that Minecraft needs a dynamic water mob...
