Both Skeleton and Zombie variants for deserts, oceans, and snowy biomes.
Plundered - Skeletal pirates. Spawn with harpoon or harpoon gun. Harpoons are thrown for 1.5 attack damage and a debuff called Landlocked to slow swimming speed. Harpoon guns are loaded like crossbows, and shoot farther when fired. You'd also be reeled in when hit by the harpoon gun.
Bitten - Zombie Vikings with hatchets. Spawn inside and around powdered snow and can climb through it like spiders in cobwebs. Hatchets do the opposite of knockback, they pull a hit enemy closer.
Viziers - Ordained desert skeletons like the Eternals from Magic: The Gathering. Spawn inside Desert Temples to protect them from raiders. Would have Redstone-tipped (or punch) arrows that they shoot downward to trigger the TNT trap.
Skeltlings and Witherlings - Inspired by baby zombies, but not an equivalent. New models still just as wide, but stouter and scrappier (Skeltlings 1 1/2 blocks tall, Witherlings 2 blocks). Skelktings with short swords, Witherlings with two sickles, only giving Wither 1.
A skeleton infested with Skulk called the Skulkbone who doesn't make any sound would add more life to the deepdark as well.
Maybe forest or lush cave undead called Shamblers, swamp undead called Dredges, and abandoned mineshaft undead called Quarries or Tunnellers. Regular zombies and skeletons would also be able to spawn in these biomes. Zombie villagers already spawn in the right attire for their climate, so we should get more of them.
