It will take so much time to migrate the graphics engine to Metal 3 (no cost-benefits from my POV), besides it will drag many bugs on the process and newer content will be delayed. Apple its the principal culprit here to deprecate the newer versions of OpenGL for MacOS & iOS ecosystems. I'd suggest to try this type of migration with the Bedrock Edition cause they've change the render engine to Render Dragon, who knows maybe it will be available for MacOS and Linux systems coming soon.

While Mojang/Microsoft is more likely to use Metal APIs in Bedrock if they ever bring that to Mac (or at least implement it for iOS & iPadOS), the improvements in Metal 3 might make translation layers like MoltenVK or MoltenGL more functional, and thus useful, for Java edition. This would be more likely to be implemented by things like shader mods and alternative launchers than Mojang itself though, I would expect.

It would be hard, but they just need a dedicated team for optimisations. And it's good to support it for Mac as more people are switching to Apple Silicon Macs even from Windows because the performance per watt. They also don't need to rush this and slowly do it.

Also with the latest version of LWJGL they should be able to do it.

I don't think Microsoft is interested in updating the metal version of minecraft. how he doesn't care to port minecraft legends and dungeons to mac.
