Since copper hasn't gotten much of a use with the copper golem losing the mob vote, and copper horns being scrapped, copper has seemed like an extremely useless element. Their only use is in crafting spyglasses, which aren't very handy, and lightning rods, which are very situational. So, my idea is that copper can be used in enhancing or creating more redstone mechanics, or shenanigans; such as a reinforced piston which can be crafted by adding a copper ingot to a piston and can push more blocks/push blocks further, reinforced iron armor which can just be iron armor plated with copper (since real life copper is malleable), copper wires which can run up walls or connect redstone to other machines without triggering other mechanisms in the vicinity, copper bars which can be connected to redstone to damage players and mobs, or magnets perhaps, which can be made with iron and copper, and can attract nearby metallic items, or magnet blocks which can be powered to move metal based blocks; heck, maybe even those steampunk flying machines? Idk, maybe I'm blowing my horn too hard.
