The End, as it stands now, is a barren, empty wasteland. While this may be by design, the endless sky in the End, one of it's defining features, are completely empty once the dragon is slain, making the End feel too empty.
My solution to this? A Neutral mob called the Enderfin. These would slightly resemble fish, although they would fly through the End sky. They would remain passive unless the player looks at them for over 5 seconds, which will cause them to swoop down to attack the player, landing onto the ground after attacking. They would attack the player if they walked too close to where they land, unless the player feeds them Chorus Fruit, which would allow the player to tame the Enderfin.
If they are tamed, you can attach a saddle to an Enderfin, although they cannot support the player's weight, preventing you from flying on their back. Instead, they will save you if you fall into the Void, although they will need to rest afterwards, unable to save you again for 5 minutes.
Feeding an Enderfin Eyes of Ender allows them to breed, laying an egg (Endermen will try to trample the egg, so it would need protection). They can only breed in the End, however.
When the egg hatches, along with producing a baby Enderfin, the egg may drop an Enderfin Eggshell. These can be attached to Fireworks to give the player a 3 block vertical boost when opening their Elytra. This would give the player a reason to return to the End more often, to gather Enderfin Eggshells for these rockets.
