It would be cool if you could “Ice log” blocks (and mobs; we’ll get to that) like water logging.
The ice logged blocks could include pretty much all of the water logable blocks (unless some don’t make sense) and it would essentially encase the block in ice (or fill the gaps that water fills with ice instead). This could be done by first water logging the block and then by having enough ice, packed ice, blue ice, or anything cold related nearby. It would then freeze after some time and thus be “ice logged.” To keep it ice logged it would need cold blocks in the vicinity, however I think there should be a range so that the cold blocks can be hidden behind other blocks so this can be used in building without showing the other blocks. Also would need a way to keep the water logged blocks even with nearby cold blocks (building issue).
For ice logging a mob (previously mentioned) you could encase a mob in water and surround it fully with blue ice (as it would be the coldest) and thus it would encase the mob in ice instantly. I only say instantly as mobs drowning would be an issue so it needs to be done quickly. You then can remove the blue ice and as long as cold blocks are around the mobs will stay in ice. Also, these ice logged mobs could be found in the ice caves to add to the experience.
Heat sources like torches would break the ice off these mobs which could end up as a surprise in these caves. The heat would also melt ice logged blocks back into water logged blocks.
