So how this will work is you craft an incubator, place it down, place the dragon egg inside if it, use lava to hatch the dragon egg, and once it's hatched you feed it Chorus fruit to tame and grow up. Use a normal saddle to ride but make sure you make more dragon eggs. Has the Ender Dragon powers, too!
