Since there are so many insects in the real world, having insects in the Minecraft world would fit in perfectly. I already know that Bees are a mob in Minecraft already.
Beetles: Passive, Multiple color variants, some will have different designs, some beetle variants could be nocturnal while the others stay active during the day, found everywhere except cold biomes, drops beetle shell plates (plates depending on color of beetle)
Butterflies + Moths: Similar actions as bees; flutter from flower to flower, multiple color variants, caterpillar mobs can simulate the life cycle by eating grass and dried leaves then going into chrysalis before coming out as a butterfly, could be found in Winding River biome and Sunflower Field, drops butterfly wings.
Ants: Found in every biome except cold biomes, can create anthills, hostile if anthill is broken or if the ant is hit, drops chitin (can be used for decorative crafting.
Hornets/Wasps: Found in flowery biomes and near villages, hostile if attacked, attacks bees, hornet attack causes the poisoning effect for a few seconds, drops stinger or hornet wings.
Worm (Not a bug, but still would be cool): Active at night or rain/thunderstorms, passive, drops slime.
