I've finished Minecraft Dungeons 2 and I really enjoyed it, but I just felt that the bossfights we're Underwhelming, Easy or Lacking because it is incredibly easy to max out your gear with the blacksmith and the boss fights lack Variation in their attacks. one of the boss fights that I loved was the monarch, it's attacks and half health phase made it feel more like a threat and less like a Speed bump. it's half health phase changed things up and made me focus my attention to the echo monarch. With lots of the other boss fights it gets a bit repetitive and sometimes I can just walk up to a boss, stand still and shred the bosses health with the right weapons.
Since you can easily max out your gear with the blacksmith there's no reason to go explore and find new gear if you already have good unique weapons and/or armor.
Another thing is when you have maxed out gear from the blacksmith you can shred bosses health with the right gear in about 1-3 min
going back to the exploration and quests, there is no motivation to do them other than not having a specific weapon or item you want. when I saw the quest that gave me the pride of the plains I did that quest without hesitation, got the weapn and then never used another weapon again.
What you can add
Make the boss fights more interesting and give them phases forcing the player to plan
the grand illusioner is a Great Opportunity for a boss
add/make some quests work like dungeons 1
make the main story longer (more content/less repetition)
