Dripping Water and Ice Crystals

When water has a block beneath it and air two blocks beneath it, it makes water dripping particles.

It would be a cool idea that if the water source is in a frozen biome and the water freezes, the new Ice Crystals spawn where the water particles appeared.

This would make a way for them to be renewable.

You could also perhaps make waterfalls flowing down from a ceiling freeze into icicles if you wanted to take the freezing mechanic a little further.

  water above ice blocks should grow icicles underneath.
