Currently, Minecraft has many mobs introduced over a long period, so newer mobs move much more smoothly while older ones feel stiff; look at camels—even a slight twitch of their ears makes their movements incredibly fluid—whereas older mobs like cows, sheep, horses, chickens, and many passive and hostile mobs lack that polish, so why not completely rework their animations? I hope Mojang will soon release an update to fully overhaul the animations of all existing mobs, similar to the 1.14 Texture Update (which focused on textures); this time it could be called "Animation Update"!
