With the new Ice Caves and other cold-themed features, I think Minecraft could make frozen areas much more interesting by adding the Iceologer, Penguins, and Frozen Archaeology.
Iceologer: The Iceologer would fit naturally into Ice Caves and snowy biomes as a rare hostile mob. It could also rarely drop an Ice Wand, with limited durability that lets players use a weaker version of its ice attack. This would add a rare magical weapon without making it overpowered.
Penguins: Penguins could live in small colonies around icy oceans and snowy coasts. They could swim for fish, protect their eggs, and flee from danger. If players gain a penguin's trust by feeding it fish, it could occasionally help locate nearby underwater points of interest, such as shipwrecks or buried treasure.
Frozen Archaeology: Ice is excellent at preserving things, so players could occasionally find Suspicious Ice containing bones, fossils, old tools, or ancient items. Instead of brushing it, players could carefully melt the ice using a heat source or use a tool such as an Ice Pick to excavate what is inside. Very rarely, this could contain something special, such as a Sniffer Egg?
Frozen caves could also contain small abandoned camps, ruins, or ancient structures buried beneath the ice.
Together, these features would make Ice Caves more than places to mine. They could become places where players fight, explore, discover preserved pieces of Minecraft's history, and wonder what might be frozen beneath the ice.
