I suggest adding paint pots and paintbrushes to Minecraft. Players could paint individual faces of compatible blocks, especially wood, instead of changing the whole block.
The paint would tint the original texture, so painted wood would still show its natural grain. Each face could have a different color, allowing up to six colors on one block.
For example, the inside of a wooden house could be painted blue or purple while the outside remains natural wood.
Paint could also be removed to restore the original block. This would give builders much more creative freedom without needing hundreds of new block variants.
