Since the dappled forest biome is essentially in permanent autumn, an alternate yellow leaf texture for birch trees within that biome would both make sense and enhance the autumn vibe. The birch tree could be differentiated from yellow poplar by making it only partially turned in color and keeping some of its green -- the variety and contrast would look great, I think.
Additionally, boiling birch bark has long been used to make natural yellow dye in the real world (my 2nd grade teacher demonstrated this in our class and it was a cool lesson I still remember). I think making yellow dye craftable from birch logs would be good both for functionality in game and also legitimately educational.
