I understand that adding forest themed animals to the dappled forest could be hard as adding an animal could mean adding that very animal to other forest biomes to match real life, but the beaver could be different, beavers in real life already are more common to be found near deciduous trees with soft bark like poplar which is one of their favourites. Adding beavers wouldn't also instinctively mean adding beavers to other forests and beavers could end up being very cute. I think adding them as a passive, mainly ambient animal would fit, beavers are pretty popular animals and a sub species of beaver the European beaver live in Sweden (the home of Minecraft). Beavers were also on the verge of extinction in many parts of Europe in the 1800s and a massive conservation effort was made to bring them back. Mojang has always been eager to adding animals into the game to help bring awareness of endangered or threatened animals lorm the panda, so why not the beaver? They are already vital to landscapes.
Beavers in game could be bred with sticks or any log, they would chop down a near tree when fed (not any log has to be a tree to stop griefing). This could be important in making tree farms and it could make tree farming fun. I think limiting beavers to dappled forests would be great but if you want to go above and beyond adding them to the spruce taiga and it's variants would be amazing.
