Deer would spawn in forests as deer, tundra, taigas and most cold biomes as reindeer and white in cherry groves. You tame (babies only) with apples and breed them with apples. Reindeer are faster, deer are faster at turning and can cut through leaves and the white deer can jump really high, like 8 - 10 blocks.
