Easily the biggest issue that I can currently recognize with the Bedrock system, is that there is no way to easily downgrade versions of Minecraft and be able to play them with your friends. One of the best and most reliable things about Minecraft on Java is the fact that at any point you can easily downgrade to your preferred version and have no obligation to stay on the current version besides the obvious gameplay improvements. Better yet, when downgrading, it is still easy and accessible to play with your friends.
On console though, there is no such system, which ultimately puts a lot of pressure into keeping the game in a state that is acceptable to all audiences.
Personally, one of the greatest flaws I've found with Minecraft as a game in its most recent years is its inability to evolve, to change. I'm sure this is a horse that has already been beat, but the game has remained at a very stagnant point in it's development for several years.
I believe that if/when a "launcher" system to choose versions is available on all platforms, it would be much more strategically viable to change the direction of the game's development into something more active; more "new".
Older versions would always be as available for online play with friends, so regardless of a player's stance on recent changes, they would have no reason to stop playing the game that they love, allowing much more broad and sweeping changes to take place without the greater Minecraft community as a whole worrying.
