For its behaviours, it is a passive mob and will be spawned around pool or river in the dappled forest and never be on the ocean. Or we can add more variants of the duck, depend on what temperature they spawn. For cold biome, it's going to be mallard or wood duck (or even Eider duck if those two are not cold animal), white pekin duck for temperate biome (or even mallard or wood duck to differentiate it with temperate chicken), and black-bellied whislting duck for warm biome, though it's not gonna be exclussive for the Dappled Forest. It quacks and doesn't lay egg (to make it exclusive for chicken), dip its head in the water when swimming, and wiggling their tail. It is bred using seed (any kinds just like chicken) and/or bread. When killed, it will drop feather and its meat (called duck).
Since Minecraft doesn't have specific gender for the animal mobs (as example chicken which seems to look like a hen), its texture will be taken from the male mallard or wood duck (the one with green head if it's going to be an exclusive mob), or we can have both colors of female and male ducks just like parrot (and breeding them just fine).
Actually I would like to suggest more animals as Deer/Moose/stag (passive), brown bear (neutral/hostile), woodpecker (passive), and squirrel (passive) for the new biome. But my first concern is the duck, and I believe there are a lot of community feedbacks that have suggested them. It's all to liven up the ambience of the biome.
