A rather simple suggestion: rename Poplars to Maples. Not to b the "Minecraft needs to be realistic !!" guy, but maple trees actually exhibit tri-colored leaves in the fall; Poplars are only yellow. Also, according to my limited research, Poplars are not the primary cause of the colors seen in Michigan and Swedish fall forests as the devs say they were inspired by. Maples are present in both of these places. We would be able to have maple syrup with maple trees, and maples are the "stereotypical fall tree" anyway, as a maple leaf is seen on the Canadian flag. If Mojang is concerned about being mocked by the "Juan meme" for adding maples, I would just ask that Mojang do what is best for the game in spite of criticisms. Thank you.
