A few ocean animals I could think of that might fit in minecraft
1. sunfish
just kind of existing.
good for filling the oceans (the minecraft oceans are really empty) with out having to spawn a million
2. shrimp
could be extra large shrimp (like spiders) so they arent impossible to deal with
bucket of shrimp :)
3. giant isopods
these could allow for a ocean trench biome since they can live 7,000 feet (roughly around 2,000 meters) below ocean surface :)
also could be bucketed
4. japanese spider crabs
I love these sillys
they could also be an excuse to add barnacles and muscles to the ocean and ship wrecks.
5. anemone
spawn in coral reefs
able to hold tropical fish like a beehive
can be bucketed
for the bucketing either if there are no fish in the anemone or the bucket sprite could change if it has fish
6. shark
idk if minecraft siad that sharks were a never but hear me out.
neutral mob (attacks if attacked)
spawns every once in a while
variant oppirtunities (if different spawn eggs or something liek cat variants, or maybe even ocean biome dependent shark variants is up to minecraft if they decide to do it)
can be feed fish (no taming?, no riding!)
could maybe lead you to something like the dolphins do?
that's all :3
