With the recent efforts to update older features, such as the textures of certain mobs (Spring to Life and Tiny Takeover), Mojang should update certain structures, textures, or systems as well.
For example, the first thing that comes to mind is the Dungeons, which, to be honest, look neglected and from the game's early years. A room similar to a Trial Chamber could be created, obviously smaller in size, containing a sort of Vault with its respective keys. This would allow for loot sharing, although deciding what to share to make it worthwhile is complicated.
Another example would be the Nether Fortress, which, while presenting a challenge between Blazes and Wither Skeletons, is relatively simple. The Blaze towers could be improved, creating a more atmospheric environment, perhaps even adding a new craftable block made with blaze rods or magma cream. Walking on this block would burn entities but not items, adding difficulty and serving as an automatic farming tool. In addition, perhaps reviving King Blaze's old idea for the first mob vote, and creating a room with a mini-boss fight.
Finally, I think we could improve the Strongholds by creating more complex rooms with mob spawners, maybe parkour sections, or redstone areas to increase the difficulty. It doesn't necessarily have to offer great loot, since the chests should be more intuitive and explain the dimension you're entering. This would serve as a better prelude to the challenge of defeating the dragon.
