many mobs have various variants, zombies, skeletons, illagers themselves, withces having also variants could flash them out a little
idea of different witch specializations sounds appealing to me, distinguished by different robes color, hats or even various outfit styles, either tied to different bioms or just spawning alongside each other
there could be regular witch we know, then specialist witches with stronger version and higher preference to single potion they throw, like harming witch preferring to toss harming potion II, or poison witch more likely tossing poison II, while other potions could be still used by them
there could also be also witches using completely new potions witches didnt use before, or even bringing new potions to game, on my mind come potion that ignites player instead of simply applying potion status effect, or witches using slime potion on other hostile mobs around them occasionally as well as witch that could use invisibility potion on other mobs around, or "healer" witch that tosses healing potions on hostile living mobs, and harming potions on hostile undead mobs to heal them if injured, rather than going after player directly
